Chile Relleno Cassarole1 large can whole green chilies4 large eggs4 tablespoons flour Jack Cheese or any cheese of your likingSpray baking pan with non-stick spray. Layer chile and cheese. Beat eggs with flour and pour over chile & cheese. Bake at 350 for about 40 minutes or until egg misture is solid. Serve with warm tortillas, refried beans and salsa - very yummy.This recipe can be increased very easily and other things can be added, tomatoes, olives, etc. The egg ratio is one tablespoon for every egg. Baking time will differ but as long as egg mixture is solid, the dish is done! Hope you enjoy!

Chicken Broccoli casserole
4-6 pieces of chicken cubed and cooked 1 can broccoli cheese soup 1 can cream of chicken soup 1 C mayonnaise 1 bag croutons (separated equally into 2 bowls) 1 bag shredded cheddar cheese (separated equally into 2 bowls) 1 bag broccoli florets
1. Grease 13x9 pan and heat oven to 3502. mix all ingredients (except for one of bowl of each croutons and cheese) into a bowl and pour into pan. Put leftover croutons on top of mixture, cover with cheese and cook for 45 mins

Chicken Casserole
4-6 chicken breasts boiled and shredded 1 can 98% Fat Free Cream of Chicken or Cream of Mushroom 1c Fat Free or Low-Fat sour cream 2 pkgs Ritz Crackers - low fat 4 oz melted butter to drizzle
**for thinner consistency use 1/2 c chicken broth and add to mixtureCrumble one sleeve of Ritz crackers in the bottom of a glass casserole dish. Drizzle half of the melted butter over the crackers. Mix chicken with soup and sour cream. Pour over crackers. Crush the remaining sleeve of crackers over the chicken mixture. Drizzle the remaining melted butter over the crackers. Bake at 300° for about 40 minutes until bubbly hot.

I posted this over on the vegetarian thread, but I wanted to post it here too.
16oz penne pasta; cooked and drained 8oz sour cream 8oz cream cheese 15oz can tomato sauce 8oz shredded cheese 1t garlic powder 1t onion powder salt and pepper to taste
Toss all ingredients together and transfer to a 9x13 baking dish. Bake uncovered @350 for 30-40 minutes.
One hint, I use a food processor and blend up the cream cheese with the tomato sauce, then I don't have little chunks of cream cheese in the dish.
Also, I love to add in veggies to this. My favorites is sautéed onions and peppers, but I've tried asparagus, broccoli and I think green beans too.

EASY Broccoli, Ham, and Cheddar Casserole
I made this the other night for dinner, and OMG it was delicious and SO EASY!!!! The kids loved it, and it was cheap to make. Would also make a good Thanksgiving dish!
What you need: 13*9 baking dish 1 12oz (aprox..) bag of steam in the bag broccoli (or any other coked broccoli if you prefer..) 1 1/2 cups cubed ham 2 cups shredded cheese (cheddar, colby mix, whatever you have!) 1 cup bisquik or hungry jack 4 eggs 3 cups milk
Directions: Preheat oven to 350 degrees. Cook broccoli according to directions, and arrange in dish. Arrange ham on top of broccoli, and sprinkle 3/4 of the cheese on top of the ham. In a seperate bowl, mix eggs, milk, and bisquik until smooth. Pour mixture evenly over the broccoli/ham/cheese and sprinkle with remaining cheese. Place in the oven and cook for 1 hour. Enjoy!
