Super Breakfast
3 Tbs butter 3 eggs 1/2 c Flour 1/2 c milk
Put butter in a 8*8 pan and place in oven at 350 until melted.Mix eggs, milk and flour together (may be slightly lumpy)Pour into pan with butter and cook at 350 for 20-30 mins or until set and puffy. Serve with fresh fruit and powdered sugar.
*to increase just double recipe and place in a larger pan

BREAKFAST CASSEROLLE
We eat this for supper sometimes.
Preheat oven to 350*.
16 oz of frozen hash browns (thawed and patted dry) 1 lb of loose breakfast sausage 1 onion, diced 1 green pepper, diced 8 oz of shredded cheese (we use sharp cheddar) 12 eggs (scrambled) salt & pepper to taste
Brown the sausage, onion and green pepper together. Put into a greased 9x13 baking dish. Sprinkle the dried hash browns over the sausage mixture. Sprinkle ½ the cheese over the hash browns. Pour the scrambled eggs over the hash browns. Bake covered for 30 mins. Remove cover and sprinkle remaining cheese on. Bake for an additional 10-15 mins or until golden brown. Let sit for at least 15 mins before cutting

Doughnut fried french toast This is beyond yummy, beyond awesome! Yay for Saturday and Sunday mornings! 2 cups flour 1 cup sugar 3 eggs, separated 1 1/2 cups milk 1 teaspoon salt 1 teaspoon vanilla sliced bread 1/4 cup granulated sugar for dipping combine flour, sugar, salt and egg yolks in a mixing bowl, stir to combine. add milk and vanilla, stir. fold in egg whites. batter will be smooth and thick. heat 1/2 inch of oil in a skillet. dip bread in batter and fry until golden on both sides, flipping halfway. dust with powdered sugar or dip in granulated sugar like a sugared doughnut. **the bread gets pretty heavy with the batter and tends to tear, i use frozen bread and carefully support the slices from the bottom, putting them on a plate to drop into the oil and using tongs to turn and remove from the oil. if your bread is torn, it's just as delish in bite sized pieces!
