Mexican Lasagna~
1 pound ground beef
1 small onion 1 small can green chilies(chopped) 1 can chili beans 1 package taco seasoning 1 can tomato sauce 1 package soft tortilla shells 1 package cheddar cheese
Brown ground beef-drain. Add rest of ingredients(except tortillas and cheese) into pan. Simmer 10-15 minutes. Layer in 9X13 baking dish~tortillas, mixture, cheddar cheese(do it twice). Bake at 350 for 35 minutes. You can garnish with sour cream, taco sauce, lettuce, and tomatoes.

This is one of my moms and it's delicious. I love to put ketchup ontop:-) (re-posting for Tiffany) MEXICAN PINTO BEANS 1/2 lb pinto beans*** 1/2 chopped onion*** 1/2 lb hot Italian sausage 1 lge cut up bell pepper 8 oz. can tomatoes 1/2 tsp oregano 1/4 tsp cumin 1/4 tsp pepper Brown sausage, remove. saute bell pepper in fat. Stir in seasonings & tomatoes, heat til boiling. Drain beans, reserve liquid. Mix beans, pepper mixture & sausage in casserole, add enough liquid to cover beans. Cover and bake at 325 for 2 1/2 hrs. Not sure if this one has been shared before but I made this recipe from Kraft.com last night and it was SO good! I will list the recipe as is but share what I changed or added based on reading the reviews. This apparently freezes very well but I wouldn't know because DH polished the entire thing off. I did NOT line the pan with foil but instead sprayed it with cooking spray. Reviews say it sticks using foil. I used whole wheat tortillas. I used about double the cheese the recipe recommends. We LOVE our cheese here lol. For the topping I used shredded lettuce, tomatoes, red peppers and green onions. With MORE sour cream. What You Need 1 lb. (450 g) lean ground beef(or shredded chicken or ground turkey whatever!) 1 large onion, chopped 2 cups chunky salsa 1 can (19 fl oz/540 mL) black beans, rinsed 1/4 cup Kraft Zesty Italian Dressing 2 Tbsp. chili powder 6 medium flour tortillas 1/2 cup sour cream 1 cup Tex Mex Shredded Cheese Make It HEAT oven to 400ºF. BROWN meat with onions in large skillet on medium-high heat; drain. Stir in next 4 ingredients. PLACE 3 tortillas in single layer on bottom of 13x9-inch baking dish. Cover with layers of half each of the meat mixture, sour cream and cheese. Repeat layers; NO tortillas go on top layer! Cover. BAKE 40 min. or until casserole is heated through and cheese is melted, uncovering after 30 min. Let stand 5 min. ENCHILADAS 1/2 lb. hamburger 1 small chopped onion 1 small can chopped black olives Lots of grated cheese 1 lge can enchilada sauce (I add a little catchup) corn tortillas Brown hamburger, drain; add onion, olives, cheese (just guess). Heat tortillas 1 or 2 at a time. Fill with meat, add a little sauce and roll. Put in pan. Spread w/remaining cheese and pour lots of sauce over top. Cook about 30 min. in 350 deg. oven. Yummy!

Your recipes make me want to be more domestic! Everything sounds so yummy, but I hate cooking. Actually, just when I have a full time job, I used to cook all the time when I was a SAHM!.
