I'd love to see some snacks recipes as well. DH and I love to play games (board and card) at night after the kidlets are in bed. Here are some of our favorites.
Jalapeno Dip 16 oz cream cheese; softened 1/2c mayo 1/2c sour cream 2 4oz cans green chilies 1 jalapenos; minced 3 cloves garlic; minced 1 1/2c parmesan cheese; grated
Mix all ingredients together, reserving 1/2c parm cheese. Pour into oven safe bowl, and top with reserved cheese. Bake @375 for 40 minutes.
Spinach Artichoke Dip
2c parmesan cheese 3/4c cooked spinach 1-2 artichoke hearts; chopped 2/3c sour cream 8 oz cream cheese; softened 1/3c mayo 3 cloves garlic; minced
Mix all ingredients together and pour into shallow dish (like pie plate), and bake @375 for 25 minutes.
Cheesy Salsa
16 oz salsa 8 oz cream cheese 1c shredded cheddar
Blend half of salsa with cream cheese. Mix all ingredients in a medium sauce pot and heat over medium heat until cheese is all melted.
Sunflower Bars (these are SOOOO good!!)
1c of EACH of the following: peanut butter honey chopped pecans shredded coconut raw sunflower seeds raisins
Heat peanut butter and honey in small sauce pan until melted an smooth. Mix all ingredients together and press into a 9x13 pan. Bake @350 for 25 minutes. Cool and cut into squares.

I just made some yummy caramel popcorn and here is how: pop popcorn on stove using grapeseed oil (you can get this at whole foods or use what you have, but this is healthiest). heat 3/4 cup turbinado sugar with 2tbsp grapeseed oil and 2tbsp water on med heat so that it bubbles. Heat for 3 mins or until you get a hard ball when dropped into a glass of cold water. A soft ball will make the popcorn mixture gooey Drizzle over popcorn (in a large bown), turning with a wood spoon as you go. Allow to cool, then break apart. For a super yummy treat, spread out on a wax paper lined baker sheet and drizzle melted chocolate over the caramel corn, cover with wax paper and use a 2nd baker sheet to flip and then drizzle that side. SOOO good.
